Savoury Sweet Potato and Hemp Protein Waffles

When you’re after a savoury breakfast (or lunch) that will be nutritious well as tasty, try these savoury zucchini and hemp protein waffles. This recipe uses the Kiki Health Organic Hemp Protein Powder, a quality plant protein high in essential amino acids and dietary fibre. Hemp protein is highly digestible, and you can relax knowing this powder is raw, cold milled, GMO-free and pesticide free. For an extra-filling meal, add some poached eggs or hummus on top.

Main Ingredients:
  • 2 medium orange sweet potatoes, peeled and grated
  • 3 zucchini, grated
  • 3 free range eggs
  • 3 tablespoon of Kiki Health Organic Hemp Protein Powder
  • 1/4 cup of chives or onions, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated cheese (if desired)

Heat a waffle iron to a medium to high heat and grease with olive oil or coconut oil. Once peeled and grated, place the zucchini and sweet potato into a bowl lined with a clean tea towel, wrap, and squeeze out the excess water. Stir in the remaining ingredients to combine.

Add 1/4 of the batter and cook on medium-high for 5 to 8 minutes until golden and crisp. Repeat with the remaining batter. Keep cooked waffles on a rack in a low temperature in the oven until ready to eat, and serve with hummus, poached eggs, pesto, relish or salad.
